Today, I’d like to talk about what we eat every day
I used to feel tired and drained all the time even after I try resting and eating properly
That’s when I started looking for books in health and wellness, also choosing the right food for me
Now I’ve become a vegetarian for the environment, the animals and mostly my precious self
Luckily, being a vegetarian works for me. I’d like to try a variety vegetarian diet
This is an apple vinegar honey drink to get my energy back and maintain good health
It’s a simple mixture of one spoonful of raw honey and two tea spoons of apple vinegar which I drink once a day
I go grocery shopping only when I eat up all the remaining ingredients to reduce food waste
I’m going to make a homemade salad with what’s in my fridge and head out to market
I usually throw in all the ingredients I have at home
There goes one last tangerine that waited in the fridge
I grind a small amount of whole peppercorns just before its use to keep its flavor longer according to a book I read
Black peppers are extremely sensitive to heat, I try not to use it right on top of steaming hot dish
Let’s make dressing!

I love to craft my own unconventional recipes
I turn my leftover lime into a cup of tea. It smells amazing!

After hitting the grocery store, I suddenly felt hungry. I ate an avocado natto bibimbob
Next morning
I’m going to make Kabocha squash soup
Be sure to preheat your stainless steel pot on low to medium heat
While bringing the pot to medium heat, start preparing your ingredients
Add a splash of water. If it stays in a ball and rolls around, turn off the heat and let the pot cool off
Avocado oil has a very high smoke point that makes it great for frying with
Just add a cup of water, not to make it too watery
Coconut cream I often use for soup, curry, sauce, etc is stays solid in the fridge but it melts easily in heat
Season to taste with salt and pepper into a ladle, not straight into the pot
When the Kabocha squash gets soft, puree it with a spoon
A simple recipe that doesn’t even require a blender
Fleur de sel is great as a table salt for its thickness
Add some parseley
Let’s make salad now
Cauliflowers are great to use instead of rice with its nice and sticky texture

Another grocery shopping day

I bought sweet potatoes-my regular ingredient, carrots, avocados, lemons, grapefruits and tangerines
They say two tangerines a day is good, but can’t stop eating’em.
My old friend sent me a package full of gifts
Drip bags of coffee, bandages, sugar and a short letter
I feel a lump in my throat, a day filled with her love and friendship
Pour some water through the filter three times then fill the rest with hot water. Just the way I like it
The smell of coffee spreading throughout my small minimalist room, it’s been a while
A vegetarian diet makes me hungry more often, I bought a bag of rice
I’m going to make an avocado natto bibimbob, my favorite eat out dish
Rinse the rice and soak it for half an hour. Using a 1 to 1 water to rice ratio, put them into the pot
Bring it to boil and reduce the heat to low heat for 15 minutes
Then turn off the heat, let it sit for 5 more minutes. Voila! Delicious, savoring stove cooked rice
Cut well riped avocado
Add rucola
avocado half
and natto
A pinch of salt and pepper on a riped avocado is the best
Here goes newly bought sesame oil
and the left over radish slices

I made Kimbab with leftovers
Salt and sesame oil to rice
ruccola and avocado
roll it tight but be careful not to push too hard
Finish with pepper and here you go!
The next day,
I tried with seasoned spinach, stir-fried carrot and avocado
Maybe too much rice this time, but still so delicious
Hibiscus tea I often enjoy night time
This is my fridge right after grocery shopping
apple vinegar, coconut cream, celery, lemon slices
green olives, black olives
various Indian spices
carrots, sweet potatoes, tangerines, broccolis, rice, vegetables for salad
whole peppers, oregano, parsley, coconut cream, rice
I keep my spices in small portions to keep them fresh
apple and lemon
I’ll make vegetable coconut curry
Stir fry sweet potatoes, carrot, cabbage and cauliflower with avocado oil, add coconut cream and water
Add turmeric and other Indian spices
Completed with parsley and sun-dried salt!
I have a new hobby
That’s a long forgotten “drawing.”
A place for things that make me happy and adding values to life
I met up with this kitten again
Fortunately, he had been taken care of by neighbors
As I practice minimalism,
I get to live more meaningful and independent life
What I eat
what I use
what I want to experience
and meaningful relationships
