Salted Daliya (Broken Wheat)
This is made with vegetables and is very healthy
Normally most people like it
Ingredients
Roasted Broken Wheat (Daliya) – 200 grams
It’s roasted still we will roast it again in Clarified Butter (desi ghee)
We have used this 1 bowl Daliya which is roughly 200 grams
Asafoetida – 1 pinch
Cumin Seeds – 1 tsp (tea spoon)
Coriander Seed Powder – 1/2 tsp
Red Chili Powder – 1/4 tsp
All Spice Powder (Garam Masala)- 1/2 tsp
Juice of 1 and a half lemon (or as per taste)
Cauliflower – 7 to 8 florets
Potato – 1 (cut in pieces)
Green peas – 1 to 2 tablespoon
Fresh Green Coriander – a little
Tomato – 1 (cut in pieces)
Ginger – 1 inch piece (grated)
Salt to taste
We will make it in Clarified Butter (Desi Ghgee)
Switch on the gas
Add 1 tsp clarified butter in pressure cooker to roast Daliya
Let it warm a bit
Ghee is warm now, we will add Daliya
Stir on low flame
We will roast it only a little as it is already roasted
It will start giving a nice flavour in about a minute
It is giving a nice aroma which means it is roasted properly
This is how it looks after roasting
We will take it out in a separate utensil
Add 1 tsp clarified butter
Cumin Seeds
It’s very hot so we will remove from flame
Asafoetida
Coriander Seed Powder
Red Chili Powder
We will add All Spice Powder later
All vegetables are raw
Add Potatoes and mix
Cauliflower florets
The stem of these florets is small
Stem is sliced from middle so that it cooks fast
This is how we slice it
They cook easily like this
Green Peas
Mix well
Grated Ginger
We will add water now
We have taken 1 bowl Daliya, so we will take 2 bowl water (filled till where Daliya was filled)
Daliya was filled to the top of the bowl so water is also filled to the top
Measure of water will be in this proportion
Mix a bit
Tomato
It’s added last as it takes lesser time to cook
Add Daliya
We still have to add salt
Salt to taste
I have added 1 and a half tsp
Mix all the ingredients
This is how it looks at this stage
Cover the lid tightly
We will increase the flame to high
Once the steam builds and whistle is about to blow
We will put the flame on low (don’t let the whistle blow)
Keep it on lowest flame for 3 minutes
Time is important
It might burn otherwise
After 3 minutes, switch off the gas
After that will let the cooker cool on its own
Cooling means when the steam has escaped on its own (takes about 5 to 10 minutes)
Then we will add Lemon Juice, Fresh Coriander and All Spice Powder
It’s been 3 minutes. We are switching off the gas
We will open it once the steam has escaped (it will not open before that !!)
It’s been 10 minutes after we switched off the gas
There is no steam left
Let’s open it
This is how it looks
Mix it gently before serving
Lemon Juice
All Spice Powder
We will use a little of this powder to garnish so save that much
Mix
Fresh coriander (half now and half for garnishing)
Mix this as well
We will serve it now
Aroma is nice and looks good too
It is highly nutritious as well
Sprinkle a little All Spice Powder
Garnish with Green Coriander and Green Chili
I am serving it with Green Chutney
